Pine Creek Cookhouse Description:
There is no restaurant in Aspen like this one. The Pine Creek Cookhouse is set high atop the Ashcroft Valley, a half-hour from town. And the only way to get there is by snowshoe, cross-country ski, or in their perfectly enchanting sled drawn by two huge draft horses. The cookhouse is a rustic log cabin with a deck overlooking the pristine wilderness, serving gourmet food. One of our greatest pleasures is to work up an appetite skiing, and then basking in the sunshine on the deck with a hot spiced wine or freshly made Bloody Mary. Though there are plenty of good luncheon entrées, we usually opt for the salad bar, which offers 8-12 healthy complex carbo salads made with grains like quinoa, wild rice and bulghur. Another popular dish is the tofu napoleon, seared tofu topped with a mixture of spinach, caramelized onions, portobello mushrooms and a sweet soy-pickled ginger glaze. But don't get the idea this is just a health food place. Despite Chef Kurt Boucher's talents with vegetarian cuisine, he offers up dinner entrées that include a beautifully presented mixed grill of quail, caribou medallions, a wild boar chop topped with a huckleberry- lingonberry-sage reduction and fresh fish specials daily. It's vital to call for reservations and you can make your transportation arrangements at the same time, if skiing or snowshoeing up is not for you.
