Chef-owner Giorgio Baldi cooks the traditional cuisine of his childhood, from the town of Forte dei Marmi on the Tuscan coast. His simple, rustic dishes include a hearty Mediterranean seafood soup called cacciucco, splendid ravioli stuffed with spinach and ricotta in a light tomato sauce laced with porcini mushrooms, and fresh fish devoid of any fussy sauces. The branzino, flown in from Italy, is perfectly grilled and served simply with lemon juice and olive oil; and a 22-ounce bistecca alla fiorentina is equally down-to-earth and fully satisfying.
