Provence Description:
Retiring to North Carolina after years of running restaurants in California and France, chef Felix Roux discovered that he missed the chef's life. So he opened Provence in a quaint Carrboro bungalow, refurbishing the house with all the romantic charm of a French country inn. Roux's wife, Annie, manages the floor, commanding the polished waitstaff and greeting guests with graceful Gallic charm. Chef Roux's take on the French repertoire---onion soup gratinée, country pâté, smoked salmon terrine, duck leg confit, and his specialty, the catch-of-the-day oven-roasted in rock salt---will make you thankful he came out of retirement.
