Anyone with a taste for the culinary wild side should head to Maximillians for its casual-chic California bistro setting and fusion fare. The menu is full of offbeat flavor combinations, but it works. Owner-chef Michael Schiffer turns out boldly inventive, often furiously spicy dishes such as voodoo tuna served with mahogany noodles, espresso-crusted rib-eye steak, or grouper with a balsamic-ginger-wild mushroom sauce. The flavors are such that one might fear losing sight of the primary ingredients. So tamer tastes will find such winning options as a grilled Caesar salad; grilled mahi filet with olives, onions, tomato and a lemon-oregano vinaigrette; and a bountiful cioppino. The global wine list, with some choices by the glass and some half bottles, covers about 100 options, including dessert wines.
