Passing through the extra-large wooden doors of The Chateau, guests feel as if they are stepping back in time as they take in the stone fireplace with a roaring fire, high vaulted ceilings and warm-toned, hand-textured walls. Pianist Bob Finnie adds an elegant touch to the old-world ambience that forms a comfortable setting in which to appreciate chef David Walford's creative American cuisine, produced in an open display kitchen. Start with iced oysters on the half-shell, carpaccio of big-eye tuna or the caviar service with traditional garnishes. Then move on to such robust main courses as wood oven-roasted Colorado rack of lamb with rosemary-olive sauce and a peppered buffalo filet mignon. Or opt for an equally creative seafood specialty such as crisp Rocky Mountain trout filets with snowcap mushrooms, asparagus and purslane.
