Centre V Description:
Fervently French and fashionable, Centre V, the Parisian brasserie at The Arrabelle at Vail Square, is the village's upscale hot-spot for pomme frites and fruits de mer. Modeled after Brasserie Lipp and La Coupole in Paris, the restaurant's lively surrounds echo what habitués would expect to find in a contemporary brasserie: exposed red brick walls; soaring, vaulted ceilings; burnished woods; convivial conversation; a bustling kitchen; boutique French wines; and a shellfish shucking station for voyeurs of oysters. Executive chef Tyler Anderson, who formerly helmed the burners at Vermont's Equinox Resort & Spa, is at the forefront here, turning out quintessential French classics like trout amandine, chicken paillard, steak au poivre, duck confit, soufflés and steak tartare. Portions, which are large, are conducive to sharing, desserts are diabolically rich, and the slope-side patio is an ideal way to commune with friends while checking out Vail's head-turning ski scene.
