For a high altitude Spago experience, head out to the swanky community of Bachelor Gulch where The Ritz-Carlton hosts the restaurant's newest branch. Master Puck has recruited Mark Ferguson as executive chef for the Tony Chi-designed mountain venue. The room creates a departure from the previous restaurant located in the hotel. Now the décor is rather modern and bright with black-and-white mountain landscape photography and striking cowhide chairs. The restaurant breaks down into three areas: an exhibition-style kitchen, a dining room with a 14-foot-high ceiling, and a 34-seat bar and lounge. Beyond Spago classics like handmade sweet corn agnolotti with mascarpone and the Chino Farms roasted beet and goat cheese "layer cake," you will be treated to seasonal creations. In the mood for risotto with scallops, shrimp and Maine lobster, steamed organic salmon Hong Kong-style, or Chinois-style Colorado lamb chops? Pastry chef Ryan Witcher executes desserts under the watchful eye of Sherry Yard, creating sweet treats like twelve-layered flourless chocolate cake or traditional kaiserschmarren. The restaurant has a solid wine list with an esoteric Austrian selection that will help wash down the affair.
