THIS ESTABLISHMENT IS TEMPORARILY CLOSED FOR RENOVATIONS When the Hyatt Regency crowned its first Houston location with a revolving restaurant, locals considered it a wonder of the world. It's still an impressive sight with a menu equally worthy of special occasions, like a teenage birthday or a tourist treat for out-of-town guests. For starters, there's baked Brie, wrapped in puff pastry and served with garlic; and the Bangkok purse, a rice paper wrap filled with chicken and chorizo. Try the smoked jalapeño chicken with whipped purple potatoes. The mushroom-rubbed lamb rack features a gingered Dijon mustard sauce, and the sautéed veal chop is topped with a crawfish ragoût. The classy restaurant also offers a line of rough-and-ready grilled steaks---perhaps in homage to the men who capped its namesake oil well, the Spindletop, which began Houston's oil boom a century ago.
