Breakfast at Brennan's evokes a lavish spectacle featuring decadent dishes that usually present a pair of poached eggs with any of several meats, seafood, vegetables and butter-rich sauces. With each course, the menu suggests a wine selection, perhaps the only menu in the city to do so. While the routine---and its more than 50-year-old recipes---is a throwback to a more genteel dining experience, the repast remains popular, especially with tourists. Gumbo simmers on the chef's main stove all day, and should be the jumping off point for every meal. Traditional grillades and grits are a staple on the menu, but take your time and study the dozens of options. At lunch and dinner, the best bets are the tiny buster (soft shell) crabs, when in season; the oysters Rockefeller; and sautéed escalope of veal with crab meat. Cream- and butter-rich sauces ladled over so many of the dishes tend to mask the main ingredient's flavor---ask for sauce on the side, and do yourself a favor and order fresh lump crab meat on your entrée. Brennan's boasts one of the most extensive wine collections in the city, and one of the most meticulously maintained cellars. Bananas Foster was invented by Brennan's and is still flamed tableside.
