Her spirit is summoned in the restaurant's Swizzle Stick Bar, which is renowned in town for mixing up creative, modern cocktails. The kitchen exults in blending traditional New Orleans cuisine (try the proper, medium-dark-roux seafood gumbo) and Southern fun (the fried chicken Cobb salad makes a fine lunch). No Brennan family restaurant would be without a shrimp rémoulade; at Adelaide, the shrimp are seasoned with boiling spices and the cold, creamy sauce sweetened with Cognac.
