Delmonico's menus, overseen by chef Spencer Minch, resonate with Creole classicism yet have a good bit of the modern-day snap for which proprietor Emeril Lagasse is known. The major specialty is steak---Creole-seasoned USDA Prime filet mignon, rib-eye steak and New York strip, all dry-aged on the premises. But there is plenty of room here for adventure and creativity. Of all the restaurants in New Orleans, for instance, this is the place to splurge on the chef's dégustation menu, which changes nightly and always involves as much forethought and attention to ingredients as it does exterior polish. The brunch, with its tableside preparations, can be an elaborate affair, as befits the swank setting. After all, Lagasse poured more than a few million dollars into transforming this primly elegant, hundred-year-old Creole restaurant into a fantasy of glitz and plush as befits his showman's legacy.
