Sample the wines of Southern Italy to go with, say, an unusual, though tempting, appetizer of seared day-boat sea scallops over an Apulian black-chickpea salad. Don't miss the wood-oven-roasted sausage served over soft polenta. Indulge in the earthy roasted veal chop, with mixed mushrooms and string beans, or the venison shank, slow-braised with saffron mashed potatoes. Close your eyes and you can imagine you are out among the orchards of Apulia. Equally transporting is Enoteca I Trulli, an almost clinically austere little wine bar that connects to the restaurant, where Italian wines are served by the glass and the flight.
