Bloomsbury Bistro Description:
Owner-chef John Toler uses the flavors of the world for his pantry, and changes the menu of his cozy neighborhood bistro according to the market and his inspiration. Depending on the season, the offerings may include slow-roasted Colorado lamb hind shank over root vegetable-spiked soft polenta with bell pepper and roasted tomato piperade, lobster risotto cakes, and grilled sweetbreads over spinach-ricotta gnocchi and giant white beans. Toler's whimsical desserts may include the likes of Mexico City-style aromatic dark chocolate mousse, dulce de leche caramel sauce and cinnamon churros or lemon-poppy seed pound cake "French Toast" served hot off the griddle with blackberry infused Vermont maple syrup.
