Bacco's chef is the protégé of John Marshall, who owns Charleston's Italian restaurant, Al di La. Michael Scognamiglio started as one of his line cooks, then found an empty spot in a Mt. Pleasant strip mall and began to emulate his previous employer. Tender house-made pasta in rich bolognese sauce and classic risi i bisi are only a couple of the second courses that follow starters like fire-roasted olives in citrus oil and lightly dressed salads. Eggplant Parmesan is redefined with delicacy and balance; pork is infused with orange flavor; and the Mediterranean influences the swordfish treatment. The tiramisu meets the mandatory requirements for a good Italian place, and the other dessert options are surprisingly appealing as well. For those who love Al di La, each meal starts with tiles of thinly sliced, chewy, open-grained focaccia.
